Typical Amazonian Cuisine

The basic ingredient of rolled meat, a Chachapoyas cuisine, is ground beef that has been fried without adding any fat. It has an exquisite appearance and much better flavor. Inside are olives, cooked carrots, bell peppers, onions, ham, bread, milk, and hard-boiled and beaten eggs. All it’s cooked, knotted, and rolled.

Cazuela is a delicious soup made with fish, beef, lamb, or chicken that is enhanced with a variety of ingredients, including carrots, sweet potatoes, green chilies, milk, oregano, maize, rice, parsley, peas, potatoes, and even a glass of white wine.

Juane de Yuca may seem simple, is a highly nutritious and delicious Amazonian dish that is frequently ordered in restaurants in the area, especially during Holy Week. It is made up of rice, cooked beef jerky or chicken meat, and boiled wild manioc. This mash is steam-cooked while encased in banana leaves or bijao (jungle palm tree) leaves.

Cuy with Papas (Guinea pig and Potatoes) is the well-known guinea pig that is fried and served with a substantial stew of potatoes. Locals served with rice, a tiny salad of tomatoes and onions, and some greens on the side. It tastes much better because of its appealingly crunchy look. Although you may be reluctant to eat guinea pig actually is healthy as it’s a great source of protein and vitamins.

One of the tastiest cecinas in Peru is prepared in Chachapoyas. It is dried and salted pork or beef, accompanied by a salad of onion, tomato, and lettuce, plus fried plantain slices.

Plátanos Rellenos (Stuffed Plantains) is one of the province's signature dishes that makes you hungry simply by looking at it. This dish is made up of a plantain that has been cut in half lengthwise and stuffed with minced beef and peanuts. Fried, steamed, or blended, you have several options to try this dish.  

Typical Beverages of Chachapoyas

Both Amazonas and its capital are rich in refreshing beverages and spirits. The most popular ones are guarapo, chuchuhuasi, milk liquor, etc.

Guarapo is a simple but delicious and refreshing juice made from boiled and fermented sugarcane. It is a non-alcoholic beverage so popular that Chachapoyas celebrates a special festival in February: the Guarapo Festival. People consume at any time of the day, either at room temperature or chilled.

The  Chuchuhuasi is a strong alcoholic beverage from the Peruvian jungle is also a powerful aphrodisiac with healing properties. This drink is made from a small piece of chuchuhuasi root, a tree from the Amazon region, specifically from the Condorcanqui province. It also contains sugar, spirits, soda, and lemon. It can be sweetened with a little honey.

Liquor de leche (milk liquor): Spirits and a tiny quantity of milk are the only components in this beverage that are served as part of the regional cuisine. Coconut milk and manioc juice can be added.
